WHAT IS EGUSI SOUP

Egusi soup aka Melon Soup (English Translation) is a soup Nigeria as a Nation is known with.  Egusi aka Melon is gotten from particular specie of Water Melon.

This Specie of Water Melon is ripped open for the Egusi (Melon) which is also its seed to be harvested.

The harvested Egusi is now washed and dried after which it will be pilled which is the removal of the shelf.

The basic ingredients needed on how to prepare Egusi Soup (Melon Soup) for happy home are:

  • Egusi (Melon). Quantity depends on the purpose for preparing the soup.
  • Meat (Preferably Goat Meat, Meats from Cow Head and Cow tail)
  • Fish (A combination of Dried Fish and Stock fish will do)
  • Ogili Okpeyi (Name known for now in Igbo Dialet)
  • Vegetable leaf (Preferably Pumpkin leaf but one can still use bitter leaf. It all about choice)
  • Uziza seed (known for its flavor)
  • Red Palm Oil
  • Osu
  • Crayfish
  • Pepper
  • Salt
  • Condiments and Spices.

Please note that we took our time not to recommend any quantity of ingredient to be used for now because quantity depends on two things:

  • The quantity of the soup to be cooked
  • The purpose for cooking the soup.

HEALTH ANALYSIS OF THE ABOVE INGREDIENTS

The above ingredients are good but caution should not be thrown away while applying the following:

  • Salt: lack of Salt makes the food to be tasteless but excess salt is not good the health. It reduces the ability of the kidney to remove water which causes high Blood pressure.
  • Spies and Condiment: Please caution should not be thrown to the wind when one is buying Spices and condiment. Check it well. Areas of concentration include the expiry date, the company’s reputation and general public recommendation from usage. Soon we will advise on condiment and spices to be use on each food.

HOW TO PREPARE EGUSI SOUP (MELON SOUP) FOR HAPPY HOME BY RTWI

Please find below the process on How to prepare Egusi Soup (Melon Soup) for Domestic and Event Use:

  1. First of all tell yourself what you want. This includes how large you want the quantity of the soup to be.
  2. This is because if one use four cups of Egusi (Melon) to prepare soup which 100 persons will eat, one may end up putting 2 gallons of water in it for it to be enough for the hundred persons. This will end up making the soup to be watery.
  3. Let’s handle how to prepare a pot of Egusi (Melon) Soup a family of 3 will eat for a meal.
  4. A maximum of 3 Cups of Egusi will be enough.
  5. The Egusi Soup (Melon Soup) can be cooked in two different ways namely Fried Method and Boiling Method
  6. Under fried method, the cook will get a neat cooking pot ready.
  7. Grind the Egusi separately. Grind these things either separately or together: two handful of crayfish,  Uziza seed, Osu,  Ogili Okenyi and Onions.
  8. Place the clean pot on the burner or stove.
  9. Put about 3 cooking spoon full of red palm oil in the pot and allow it to heat up a bit.
  10. Then put the three cups of Egusi, now grinded in the pot and stir under a reduced heat from the burner.
  11. The heat must be a mild and well controlled to avoid burnt of the Egusi.
  12. It takes average of 15mins for the Egusi to be done.
  13. If the Egusi is not done, the taste will be as if one is eating uncooked Egusi.
  14. Once done put a full cup of water in it and stir gently for 5 mins.
  15. We advise for a full cup of water first because the water from meat and fish are yet to be added. If you added a lot of water other than a cup, it will lead to both watery and tasteless Egusi Soup. It can also lead to the waste of the sauced water from cooked meat and fish since further addition will kill all effort.
  16. Add the water the water from cooked fish and the water from cooked meat and stir again for five minutes.
  17. Taste it before putting further salt or magi. This is because salt and magi was used while saucing the meat and the fish. The taste will be almost enough if not enough but when it is not enough just add salt and magi little by little until your own taste is achieved.
  18. Put all the grinded stuff of and still stir. If the Egusi Soup is too thick please put water little by little until your desire is achieved. Please it must not be watery because watery Egusi is of no use.
  19. After about 5 mins more put all the meats, the dried fish and the stock fish in it and stir for about 4 mins.
  20. Lastly put Pumpkin. Stir and bring it down from the fire. The heat from the pot is enough to get the pumpkin to get done beside pumpkin is served half done.
  21. If Onugbu Leaf (Bitter leaf) is the preferred vegetable, it must put earlier preferably after No 16 because it requires heat to be done.

HOW TO COOK EGUSI SOUP BOILING METHOD:

  1. The cook will get a neat cooking pot ready.
  2. Grind the Egusi separately. Grind these things either separately or together: two handful of crayfish,  Uziza seed, Osu,  Ogili Okenyi and Onions.
  3. Put the grinded Egusi in a bowl and add small water to enable it to be molded into small cakelike shapes. Some add yam to hold the Egusi together.
  4. Place the clean pot on the burner or stove and add like 3 cups of water into it and allow it to heat up for a while.
  5. Proceed with the placement of the molded Egusi Balls into the boiling water until all is placed. Add 3 cooking spoon full of Red Palm oil and allow it to boil for close to 20 mins or more. This will continue until the Egusi is done.
  6. If the Egusi is not done, the taste will be as if one is eating uncooked Egusi. It is preferable to put Onugbu Leaf here if that is the preferred vegetable leaf since it needs heat to be done.
  7. Once the Egusi is done, you have two choices to make here: either to cook as Caked Egusi Soup, Un-caked Egusi Soup or as both. Please note that Caked Egusi Soup is also referred to as Egusi Soup that has seed. It can also be referred to as how to cook Egusi Soup that has seed when it is being reviewed for academic works.
  8. If you are cooking as  Egusi Soup that has seed also referred to as how to cook Egusi Soup that has seed (Caked Egusi Soup) then you go on as recommended from No 14 above till No 21 under Fried Method. The result will be the same.
  9. If you want to cook as Un-caked Egusi Soup then pull down the pot from the burner from No7 under HOW TO COOK EGUSI SOUP BOILING METHOD.
  10. Take out all the molded Egusi, place them on a mortar and pound with piston.
  11. When it is fully pounded, take it out of the mortar and place it back in the cooking pot and continued cooking as from No 14 above to No 21  under Fried Method. The result will be the same.
  12. If you want to cook the soup as partly caked and partly un-caked, then take out some of the molded Egusi. Place them on the Mortar. Pound it and return it to the cooking pot when it is fully pounded. After which you continue as from No 14 to No 21 above under Fried Method the result will be the same.
  13. It does not matter whether you pounded it along side with bitter leaf. Just Pound and return it to the cooking pot. Continue cooking as recommended above. The outcome will be the same.
